Red Cabbage Winter Salad

This popping salad adds not only flavours but also plenty of colours, phyto chemicals and omega 3 fatty acids to your meal.

Ready in 15-20 minutes / 2-3 servings


Tips

Add a can of black beans to the salad to boost it with plant proteins.

Ingredients

SALAD:

  • 400-500 g red cabbage

  • 1 crispy apple

  • 1-2 spring onions

  • 3 tbsp fresh parsley

  • 30-50 g Walnuts

DRESSING:

  • 2  tbsp olive oil

  • 2  tbsp apple cider vinegar

  • ½-1 tsp honey (optional)

  • 1 garlic clove

  • ½ tsp salt

  • Black pepper


Preparation

  1. Finely slice the red cabbage and onion.

  2. Cut the apple into small cubes.

  3. Roughly chop the walnuts and fresh parsley.

  4. Add all the ingredients to a large bowl.

  5. Grate the garlic, then place it with the remaining dressing ingredients in a jar and shake until smooth and fully combined.

  6. Pour the dressing over the salad and toss well. Enjoy!
