Red Cabbage Winter Salad
This popping salad adds not only flavours but also plenty of colours, phyto chemicals and omega 3 fatty acids to your meal.
Ready in 15-20 minutes / 2-3 servings
Tips
Add a can of black beans to the salad to boost it with plant proteins.
Ingredients
SALAD:
400-500 g red cabbage
1 crispy apple
1-2 spring onions
3 tbsp fresh parsley
30-50 g Walnuts
DRESSING:
2 tbsp olive oil
2 tbsp apple cider vinegar
½-1 tsp honey (optional)
1 garlic clove
½ tsp salt
Black pepper
Preparation
Finely slice the red cabbage and onion.
Cut the apple into small cubes.
Roughly chop the walnuts and fresh parsley.
Add all the ingredients to a large bowl.
Grate the garlic, then place it with the remaining dressing ingredients in a jar and shake until smooth and fully combined.
Pour the dressing over the salad and toss well. Enjoy!
